In 2005, researchers reported in Nature that a sealed bowl from the Late Neolithic site of Lajia, on the Yellow River in northwestern China, held millet noodles about 4,000 years old. That find does not settle every argument about who “invented” noodles, but it is the earliest well-published archaeological example. Written Chinese references appear many centuries later. Wheat pasta in Italy and the wider Mediterranean is a separate, later tradition that became a global staple in its own right.
In the United States the October 6 food day is also easy to mix up with National Noodle Month, which the National Pasta Association marks in March. Instant noodles have their own modern milestone: Momofuku Ando launched Chicken Ramen in Japan in 1958. None of those later stories created the October 6 calendar date.
