National Day Calendar approved National Boiled Peanuts Day for February 21, with the food holiday added beginning in 2025. NDC lists Dixie Grace’s Boiled Peanuts as founder. NDC’s profile describes entrepreneur Dixie Grace encountering boiled peanuts on a Southern road trip and later building a packaged, grab-and-go version of the snack. The calendar day is informal. It is not a U.S. federal holiday.

The food is older than the 2025 listing. Peanuts originated in South America and reached West Africa in the early modern period; boiling groundnuts was already a familiar preparation there (including with the related Bambara groundnut). Enslaved West Africans carried peanut cookery into the American South. The Southern nickname “goober” is widely traced to Kongo/Kimbundu nguba. Nineteenth-century accounts describe boiling peanuts when they were too green to roast; community peanut boils later became a harvest social, especially where fresh “green” peanuts come in during the warm months. South Carolina named boiled peanuts the official state snack food in 2006.

Green peanuts are freshly dug and still moist; they need refrigeration and cook faster. “Raw” dried peanuts can be boiled too after a soak, but the texture is different. Canned boiled peanuts exist for people far from a harvest stand. February is not peak green-peanut season in the South, so many cooks will use canned or soaked raw peanuts on the calendar date itself.

Why it matters

Boiled peanuts sit at a crossroads of West African technique and Southern roadside culture. A named day is a chance to cook them properly — salt, time, hulls on — and to tell that history without flattening it into a novelty meme.

How to celebrate

If you can find green peanuts, rinse them, cover with heavily salted water, and simmer until the kernels are soft enough to squeeze from the shell — often a couple of hours, tasting as you go. Cajun-style pots add spice in the brine. Off-season, use canned boiled peanuts or rehydrate dried raw peanuts overnight before boiling. Eat them warm, hulls in a bowl, like a slow snack. Compare canned and freshly boiled if you have both. Look for a Southern grocer or online packer rather than expecting every supermarket to stock green peanuts in February. Tell the West African-to-Lowcountry story at the table. Skip roasting; that is a different texture and a different day. Share a pot with neighbors. Leave alcohol out of the celebration — salt and steam are the whole show.
